{"id":400,"date":"2014-04-01T14:47:28","date_gmt":"2014-04-01T13:47:28","guid":{"rendered":"http:\/\/berenger.net\/recettes\/?p=400"},"modified":"2014-04-03T12:51:36","modified_gmt":"2014-04-03T11:51:36","slug":"citrus-curry-lentil-soup","status":"publish","type":"post","link":"https:\/\/berenger.net\/recettes\/citrus-curry-lentil-soup\/","title":{"rendered":"Citrus Curry Lentil Soup"},"content":{"rendered":"<p>From the February 2004 issue of O, The Oprah Magazine.<\/p>\n<p><!--more--><\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>3 tablespoons extra-virgin olive oil<\/li>\n<li>1 small onion , diced into 1\/4-inch pieces<\/li>\n<li>2 carrots , peeled and diced into 1\/4-inch pieces<\/li>\n<li>2 stalks celery , diced into 1\/4-inch pieces<\/li>\n<li>3 cloves garlic , finely chopped<\/li>\n<li>2 tablespoons peeled, grated fresh ginger<\/li>\n<li>1 tablespoon curry powder<\/li>\n<li>1 teaspoon ground cumin seeds<\/li>\n<li>1 teaspoon ground coriander<\/li>\n<li>1 lemon , juiced (about 1\/4 cup)<\/li>\n<li>2 large limes , juiced (about 1\/2 cup)<\/li>\n<li>1\/2 grapefruit , juiced (1\/3 cup)<\/li>\n<li>1 bay leaf<\/li>\n<li>10 cups chicken or vegetable stock<\/li>\n<li>1 cup (1\/2 pound) lentils , rinsed and picked through<\/li>\n<li>1\/2 cup chopped cilantro<\/li>\n<li>salt and freshly ground pepper<\/li>\n<li>plain yoghurt or sour cream, for garnish<\/li>\n<\/ul>\n<h2>Preparation:<\/h2>\n<p>In a 5-quart Dutch oven or soup pot, heat olive oil over a medium flame. Add onions, carrots, and celery. Cook until tender and slightly browned, about 10 minutes. Add garlic, ginger, curry, cumin, and coriander; stir 30 seconds. Add lemon, lime, and grapefruit juices; bay leaf; stock; and lentils. Raise heat to high, bring to a boil, and reduce heat to medium-low, allowing lentils to simmer. Continue simmering 45 to 55 minutes, until lentils are tender.<\/p>\n<p>Remove bay leaf, add cilantro, and season to taste with salt and pepper. (Depending on stock used, soup may need up to one tablespoon salt.)
