Pachadi

Recette de Roopa Anand (Premila’s mom).

Ingredients:

  • 1 cup coconut chunks
  • 1 piece ginger, walnut sized
  • 5 green chiles
  • 1 tablespoon black mustard seed
  • 4 cup ash gourd or winter squash, peeled, in long chunks
  • a few curry leaves

Preparation:

Place coconut in blender and add enough water to cover. Add ginger, chiles and mustard seed. Blend until smooth.

Place ash gourd in pan with enough water to coat bottom of pan (1/2 cup). Loosely cover and cook until soft. Add coconut mixture and curry leaves.
