Mrs Anand’s Green Beans

Recipe from Roopa Anand (Premila’s mom).

Ingredients:

  • 1 pound green beans, cut to 1-2 inch length
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon red pepper
  • 3-4 green chillies
  • cumin
  • 1/3 cup fresh ground coconut
  • 1/2 teaspoon mustard seed
  • canola oil
  • 1-2 dried red chillies (or 1/2 teaspoon crushed red pepper)
  • 8 curry leaves
  • salt, to taste

Preparation:

Mix beans, turmeric, red pepper and salt together in pan with scant water. Boil covered until done.

Add 1/4 – 1/3 cup fresh grated coconut. Sprinkle in a large pinch of ground cumin.

In a pan over medium heat, heat canola oil. Add mustard seed. When the seeds start to pop, turn off heat and add 1/2 teaspoon of red chillies and curry leaves. Drain bean mixture and combine all.
