Mini Shrimp Boil

Ingredients (for two):

  • 1 pound of fresh shrimp tails
  • 1/2 white onion peeled and quartered
  • garlic toes, peeled
  • 1 lemon, juiced and quartered
  • 1-2 teaspoons Zatarain’s liquid crab boil
  • optional: potatoes, quartered

For the sauce:

  • 1/4 cup of ketchup
  • horseradish, to taste
  • 1/2 squeezed lemon

Preparation:

Rinse shrimp tails. Boil a pot of water with liquid crab boil, onion, garlic, salt, lemons and lemon juice. (If cooking potatoes, add as well making sure to cook long enough as once the shrimp are added, the shrimp cook very quickly.) When water is boiling, add shrimp. Let cook for 8-10 minutes, until done. Mix all ingredients for sauce. Set aside. Drain shrimp and serve with garlic, onions and sauce on the side for dipping. We like to spread the garlic on a buttered baguette. I tend to serve a simple spinach salad along with this dish.
