Recipe from Mémé Néna.
Ingredients:
- swiss chard
- turnips
- potatoes
- rice
- white beans
- thick bacon/ribs
- ribs
- saffron
Preparation:
For an “Olla” ready at midday:
The day before, salt the meat and put them in the fridge.
The night before, soak the beans (quantity: the bottom of a soup bowl) in a big volume of water.
The morning of the day (around 9:30am), cook the beans in cold water for a good hour.
At 10:30am, rinse the beans, the salted pork and the bacon, dump them in a large pot of water. Bring to the boil and then add the swiss chards and the turnips.
At 11:30am add the potatoes and 5 minutes later the rice (if it’s minute rice, adjust accordingly) and some saffron.
Taste and add salt and pepper as necessary.
